What is the reason for the general lack of spherical symmetry of Fermi surfaces?

When looking at the Fermi surface database, most of the material don’t have a neat shape like alkali metals. Why not?
My initial guess is due to multiple valence electrons that somehow interact, but copper has two valence electrons, and still has a relatively ‘nice’ shape.
